What is Santa Maria Style BBQ?
Well, it’s not the low and slow method of cooking you may expect that takes hours & hours of low heat and lots of smoke to flavor and tenderize tough cuts of meat.
This style of BBQ is done hot & fast over an open flame with red oak. An adjustable grill lets you control the temperature. Large cuts of beef such as Rib Eye, Top Block and now Tri-Tip are generously seasoned with garlic and salt & pepper seasoning and grilled over the fire.
The meat is seared on all sides to trap in the juices and begin to break down the connective tissue in the meat, rendering a tender, juicy, mouthwatering cut of meat.
Tri-Tip comes from the back end of the cow and was generally used for ground beef. Here in the central coast of California, Tri-Tip is the go-to cut of beef to grill up for a family gathering or any reason to light up the BBQ.
Enjoy Shaw’s extensive menu with great starters like Linguiça, a spicy Portuguese sausage, to get your taste buds going. Don’t forget the beans – and not just any kind of bean, we’re talking Pinquito beans. Only grown in the Santa Maria valley, they’re about half the size of a regular pink bean and have tons of flavor. Throw in a fresh salad, garlic bread, and steakhouse salsa, and you have the makings of a memorable meal you’ll want tell everyone about.
